The weather has been chilly and it makes me crave warming comfort foods. So we had roast pork and these very simple roasties to go with it.

The weather has been chilly and it makes me crave warming comfort foods. So we had roast pork and these very simple roasties to go with it.
Cooking Instructions

Peel the potatoes and cut each one into 4 or 5 equal sized pieces.

Cook the potatoes in boiling water for 20-25 mins until almost completely cooked through.

Heat a baking tray in a hot oven. Drain the potatoes and allow them to sit in the sieve above the hot pan you just drained, this will help the steam dry.

Pour a couple of tablespoons of olive oil onto the hot baking tray. Carefully tip the potatoes into the tray and turn them around in the oil.

Don’t season them yet, put them straight into the oven and roast at 190-200 C for 30 mins.

After 30 mins bring out the tray and turn the potatoes. Add the parsnips and coat everything in oil.

Return to the oven for 60 minutes keeping a close eye on everything.

When the veg is golden brown and really crispy, tip them into a bowl lined with kitchen paper to drain.

Then turn the veg into a heated serving dish and season now with good quality sea salt and pepper. Now it’s ready to eat!
