Ingredients

  1. 4-6boneless skinless chicken breasts
  2. 2 tspchipotle powder (Very hot at this level. I use half now. Start with about 3/4 - 1 tsp and adjust to taste)
  3. 1 tspsalt
  4. 1 tspgarlic powder
  5. 1 tsponion powder
  6. 1/2 tspsugar
  7. 1/2 tspblack pepper
  8. Bottlegood maple syrup

Cooking Instructions

    Brine chicken breasts. Can’t stress this enough. I use 3/4 cup salt and 1/2 cup sugar to 1 gallon of water. I brine for 2-3 hours prior to cooking.

    Start up smoker and get it to a temperature of 275F. I use hickory or maple wood.

    In a small bowl, mix together the chipotle powder, salt, garlic powder, onion powder, sugar and black pepper.

    Rub the spice mixture all over the chicken breasts

  5. 5

    Place chicken breasts in the smoker

  6. 6

    Brush with maple syrup every 45 minutes - 1 hour.

  7. 7

    Remove the chicken from the smoker when it reaches 165F, about 3 hours.

    Brush one last time with maple syrup.

  9. 9

    Take some extra syrup and some rub. Mix together in a bowl or squirt bottle for a dipping sauce.

    Serve.
