Ingredients

  1. 100 gramsCauliflower florets
  2. 200 gramscarrot
  3. 100 gramsradish
  4. 4lemons
  5. 10-12green chillies
  6. 50 gramsginger
  7. 4 tbspYellow mustard(crushed)
  8. 4 tbspfennel seeds
  9. 2 tbspcoriander seeds
  10. 2 tbspcumin seeds
  11. 1 tspcarom seeds
  12. 1 tspnigella seeds
  13. 1.5 tspfenugreek seeds
  14. 15-20peppercorns
  15. 1 tspblack salt
  16. as requiredSalt to taste
  17. 1 tbspred chilli powder
  18. 1 tbspkashmiri chilli powder
  19. 1 tspturmeric powder
  20. 1 tspAsafoetida
  21. 300 mlmustard oil
  22. 1/2 cupwhite vinegar

Cooking Instructions

    Wash and cut vegetables as shown in pictures or as you desire.

    Boil 2 litres water,Add cauliflower,carrot and radish.Boil 3 minutes on medium heat.Strain.Dry in sunlight for 1-2hours on a cotton cloth/towel.If sunlight is not available dry under fan.

    Now dry roast crushed mustard,carom seeds and nigella seeds for 1 minute on lowest flame. Take out and keep aside.

    Dry roast remaining whole spices and salt.Coarsely grind and mix to mustard seed powder.

    Add powdered spices and asafoetida.Mix and keep aside.

    Heat mustard oil till smoking point.Let it cool.Take all vegetables in a large mixing bowl.

    Add vinegar and powdered spices.Mix well

    Pour mustard oil over vegetables.

    Store in a clean dry glass /ceramic jar.Cover lid Put in sunlight for 4-5days.

    Mix Veg pickle is ready to be served.Enjoy with your meals.
