Ingredients

~10 to 15 minutes
~6 people
  1. 1 1/4 poundscod fillet
  2. Up to a 4 inch piece of ginger, sliced into thin matchsticks
  3. 6green onions, chopped
  4. 2cloves, garlic, minced
  5. 3-4 Tablespoonsfresh cilantro, chopped
  6. 2 Tablespoonslow-sodium soy sauce
  7. 1 teaspoonsesame oil
  8. 1 Tablespoonrice wine vinegar
  9. 1 TablespoonChinese rice wine or Mirin (optional; you can use water instead.)

Cooking Instructions

~10 to 15 minutes
  1. 1

    Preheat the oven to 400°F.
Line a baking sheet with aluminum foil. Use enough aluminum foil so that you will be able to wrap the cod in a packet.

  2. 2

Combine the soy sauce, sesame, oil, rice wine vinegar, and rice wine (or water) in a bowl and mix well.

  3. 3

Peel and chop the ginger. You can cut the ginger into fine matchsticks, or you can mince it more finely, if you desire.

  4. 4

Chop the green onion and cilantro. Mince the garlic.

  5. 5

Lay the cod onto the prepared baking sheet.

  6. 6

Pour the sauce over the cod, then scatter the ginger, garlic, and green onions on top. Bring the edges of the aluminum foil together so that the fish is wrapped inside.

  7. 7

Bake at 400°F for a minimum of 10 minutes before checking for doneness. You may need to bake up to 15 minutes, depending on the thickness of the fish.
Sprinkle the fish with chopped cilantro before serving.

  8. 8

Serve with your favorite side dishes or vegetables!
