Baked Cod with Ginger and Cilantro

Baked Cod with Ginger and Cilantro
Cooking Instructions
- 1
Preheat the oven to 400°F.
Line a baking sheet with aluminum foil. Use enough aluminum foil so that you will be able to wrap the cod in a packet. - 2
Combine the soy sauce, sesame, oil, rice wine vinegar, and rice wine (or water) in a bowl and mix well.
- 3
Peel and chop the ginger. You can cut the ginger into fine matchsticks, or you can mince it more finely, if you desire.
- 4
Chop the green onion and cilantro. Mince the garlic.
- 5
Lay the cod onto the prepared baking sheet.
- 6
Pour the sauce over the cod, then scatter the ginger, garlic, and green onions on top. Bring the edges of the aluminum foil together so that the fish is wrapped inside.
- 7
Bake at 400°F for a minimum of 10 minutes before checking for doneness. You may need to bake up to 15 minutes, depending on the thickness of the fish.
Sprinkle the fish with chopped cilantro before serving. - 8
Serve with your favorite side dishes or vegetables!

Crispy Baked Cod Crispy Baked Cod
This has got to be one of the simplest, yet most tasty fish recipes I've yet to make! Coating with the mayo not only helps the crumbs to stick but keeps the filets moist so they don't dry out. The fish and sauce pairs nicely with spaghetti squash lightly tossed with a bit of coconut oil, salt & pepper; and green beans. I thought the lemon butter sauce was heavenly served over all of it!
