I wanted to use up leftover Chinese cabbage.

The core of the Chinese cabbage is easy to slice with a slicer, but the leaves can be tricky, so I recommend using a knife.

Ingredients

4 servings
  1. 1/4 headChinese cabbage
  2. 1generous amount Canned corn
  3. 4pieces Sliced ham
  4. 1 tbspExtra virgin olive oil
  5. 2 tbspMayonnaise
  6. 2 tbspVinegar
  7. 2 tbspSugar
  8. 1 tsp○ Salt
  9. 1 dashPepper

Cooking Instructions

    Thinly slice the Chinese cabbage. You can also slice it with a knife; thinner slices would better absorb the seasoning. Slice the ham into thin strips.

    Combine the ○ ingredients. Combine the Chinese cabbage, ham, and drained corn into a bowl, and toss with the mixture of the ○ ingredients.

    That's it! It's ready to serve. This cole slaw tastes great served right away, but if you let it sit for about 30 minutes, the flavors nicely meld together.
