Cream of Broccoli Cheddar Soup
Soup of the Day....Students did well with this one.
Cooking Instructions

In a 4 quart sauce pan melt the butter and add the flour, for 2 minutes cook stirring over a low to moderate heat this is a white roux

Incorporate the stock and milk to roux using a whisk for one minute.

Add the seasoning, broccoli, onions and garlic and cook for 20-25 minutes until tender
- 4
Puree with hand blender, food processor or blender,start off slow so that you do not burn yourself
- 5
Return the soup to the stove and bring to a simmer and add cheese until melted turn off the burner and serve

Adjust seasoning with salt and pepper as needed. If it seems thick add a little chicken stock or milk to thin out

My students think bacon and cheese go great with this as a garnish:)

My daughter made this soup for us one day and it was a big hit. She found this recipe on-line somewhere. It is a thick soup, but you can add more chicken broth and milk if you prefer a thinner consistency. I omit the salt as there is enough in the chicken broth and the cheese. This soup has little to it and doesn't take a ton of work, but has really well-developed flavor and is as close as you can get to a real classic soup. I used fresh broccoli for this, but you can use frozen as well. I wouldn't cook it quite as long as the potatoes/onions, though. Frozen tends to take less time. hands.matt -
