Mix the batter ingredients well and let it sit for about an hour to ferment.

Remove the bones from the Spanish mackerel, cut into bite-sized pieces, and sprinkle with a little salt and pepper. Lightly coat with all-purpose flour.

Dip the Spanish mackerel in the batter, heat olive oil to medium (340°F), and fry until the batter puffs up and turns golden brown.
