Ingredients

Makes 2-3 patties
  1. 250 gground beef and pork mix
  2. 1/2onion (finely chopped)
  3. 1/2 cupbreadcrumbs
  4. 2 tablespoonsmilk
  5. 1egg
  6. Salt and pepper, to taste
  7. Nutmeg, to taste (optional)
  8. 1 tablespoonvegetable oil
  9. 3 tablespoonssake (or water)
  10. 3 tablespoonsstore-bought ponzu sauce
  11. 2 tablespoonsmirin
  12. 1 tablespoonsoy sauce
  13. 1 tablespoonsake
  14. 1 tablespoonsugar
  15. 10 gbutter
  16. as neededShiso leaves,
  17. as neededGrated daikon radish,

Cooking Instructions

    Finely chop the onion, place it in a microwave-safe dish, and heat in the microwave for 2-3 minutes. Let it cool. Soak the breadcrumbs in milk.

    In a bowl, combine the ground meat, cooked onion, breadcrumbs, and ingredients marked with ■. Knead well. Shape into ovals, making an indentation in the center to form the patties.

    Heat vegetable oil in a frying pan over medium heat. Place the patties in the pan and cook for 2-3 minutes until browned, then flip them over.

    Sprinkle sake or water over the patties, cover with a lid, and steam for 4-5 minutes. Cook through, and when juices run clear when pierced with a skewer, transfer to a plate.
