Cottage cheese is a mild fresh cheese. It has lot more water than other mature cheese. I've never seen purred one here (US) but I used to use pureed one for pudding in Japan. I miss it. I'm not familiar with technical stuff, so visit below if you want.

I'm pretty sure you can use regular vinegar. it's sharper, so just adjust as you desire including honey. Enjoy your experimenting!!

i do it with apple cider i just add more honey and the taste is goodmy employer like it a lot😊😊😊😊😊
