Ingredients

  1. Soup
  2. 1 clovegarlic peeled and sliced
  3. 1/4 cuponion (sliced)
  4. 3 tbspextra virgin olive oil
  5. 1 cupzuzzhini (courgette) thinly sliced
  6. 1 cupchayote squash (1 squash/ sliced and seed removed)
  7. 1 cupavocado flesh (used 4 small)
  8. 1 tbspfresh cilantro
  9. 1 1/2 cupvegetable broth
  10. 2 tbsplime juice (or more to taste)
  11. 1/4 tspcumin
  12. Salsa
  13. 1/2 cupcucumber (chopped)
  14. 1/4 cuppomegranate seeds
  15. 1/2 tbsplime juice
  16. 1 tbspfresh cilantro
  17. 3 tbspgreen onions (thinly sliced)

Cooking Instructions

    Saute garlic, onions, zucchini,and squash until tender. remove from heat and allow to cool. (Added 1 peperoncini red chili pepper-remove before blending and optional)

    While vegetables are cooling, chop cucumbers, and add pomegranate seeds, lime juice and green onions in a separate bowl cover and chill.

    Blend sauteed vegetable, avocados, fresh cilantro, broth, lime juice and cumin.

    Refrigerate and allow flavors to merge (about 2 hours). Serve cold with pomegranate cucumber salsa.
