Banana ice cream soft scoop

Got ice cream maker last week. This one's in book but I doubled the recipe and used alpro unsweetened almond milk instead off full fat, single cream instead of double & truvia alternative sugar to caster sugar. Then I added xanthan gum according to weight to stop it freezing solid in the freezer..If your making this for after a meal for a family you can skip the xanthan gum. This ice cream is only for me so needed freezing. Also I got it down to 84 calories per 100g

Cooking Instructions

Peel, slice & mash bananas till smooth

Mix milk, cream & sugar in a mixing bowl then add the banana & mix until as smooth as you can

Carefully sprinkle a little xanthan gum into mix and mix in I used a hand blender. Keep adding a little a time & mixing until it's all used. If you tip it all in it will go lumpy and gloopy. PLEASE READ UP ON XANTHAN GUM BEFORE USE. It can be purchased in Tesco..

Turn machine on paddles turning pour mixture into machine & leave for 60 minutes. The paddles will squeak toward the end but will keep turning & beep & switch off at the end. Serve immediately or quickly scoop into container, lid & freeze. I got 800g. ..
