Pre heat oven to 350°C

In large bowel beat together eggs, oil, sugar and vanilla

Mix in flour, baking soda, baking powder, salt and cinnamon

Fold in carrots opt also pecans and raisins
- 5
Put in 9×13 baking dish for 40 to 50 min.

When cool frost with cream cheese frosting

Carrot Cake Carrot Cake
Carrot cake was my mother’s favorite cake. I can remember being four years old and peeling carrots and licking the batter off of the spoon. My father always had something to say about the raw eggs, but my mother didn’t care. Haha, I survived!! Anyway, I got this lamb mold and I wanted to try it out, so I made a carrot cake.
