My take on the sausage and cabbage thing with a lot less butter and the added zip of salsa and hot sauce.

Yummy with rice, pasta, or bread. You can get the rice or pasta started while the sausage is simmering.

If you don't like pork and/or beef, you can use the turkey stuff! :)

Ingredients

  1. 1 Tablespoonoil or butter
  2. 2 stripsbacon, cut into 1/2" pieces
  3. 1/2a large onion, cut into 1/2" strips vertically
  4. 1/2a medium head of green cabbage, cored and cut into 1-inch pieces
  5. 3 clovesgarlic, chopped
  6. optional 1 large carrot, cut into 1/3-inch thick pieces
  7. 1 poundsmoked sausage, cut into 1/2-inch thick pieces
  8. 1 cupstorebought salsa (like Pace, La Victoria, Frontera, etc.)
  9. 1 TablespoonWorcestershire sauce
  10. 1 Tablespoonhot sauce of choice
  11. 1/2 teaspoonkosher salt
  12. 1/2 teaspoonsugar
  13. chopped green onions and/or cilantro for garnish

Cooking Instructions

30 to 40 mins

    In a large pot or deep frying pan, bring the oil or butter up to medium heat and render a bit of the fat from the bacon.

    Add the onion, cabbage, and garlic (and carrot if you're using it) to the pan and cook, stirring occasionally, just until the onions start to turn translucent, about 3 to 5 minutes.

    Add the sausage, salsa, Worcestershire sauce, hot sauce, salt, and sugar to the pan, and give it a few gentle stirs to incorporate all the ingredients.

    Reduce the heat to medium low, cover, and simmer for 20 to 25 minutes.

    Sprinkle green onions and/or cilantro over the top and serve with starch of choice.
