Hi owano do we use cold water to clean the simsim and do we roll it when still hot ?

I also left it on low heat to avoid the mixture drying after preparation as I rolled the balls while still hot,I had a jar of cold water in which I dipped my hands to prevent them from being scalded by the mixture
