Initially Masa used to be seen as a very difficult dish to cook as such many people buy it from vendors but nowadays its been cooked almost at ever home because of its uniqueness.

Cooking Instructions

Firstly, u soak the 4 cups of unboiled rice for not less than 4 hours.u can soak over night.

Wash rice well, add yeast and boiled rice blend until smooth.Note: the boiled rice should be warm it enhances the softness of the Masa.

Add your baking powder,salt and sugar to taste.but it shldnt be too salty or sugary.add a little bit of soaked potash water.it wipes out d sour taste,if any.

Place ur Masa frying pan on low heat,put groundnut oil and then start pouring ur batter.note;do not put too much batter to avoid pouring out frm d pan. U can serve Masa with miyan allayaho(spinach),taushe,or yajin kulikuli.ENJOY.

This recipe was passed down for generations amongst the Japanese living in the States. You can enjoy crispy(the outside) and gooey (the inside) texture at once and must like this! I also like to bake with a little bit of green tea powder. It gives a lovely flavour and colour to your cake :) I used homemade azuki red bean paste(check my recipe!), and I don't make this cake very sweet.
