I added about half yellow onion (diced) after sweating the garlic. Sauted it until tender then added the canned tomatoes. It gave the recipe a little sweetness on top of the tanginess of the tomatoes.

I decided to dress-up this cake with strawberries and blueberries, and a dusting of confectioners sugar because... why not?! 😅 But more than the aesthetic effect, the berries works with the cheesecake. Try it.

A different application of this chili con carne recipe. I paired the recipe with tortilla chips and topped it with chopped fresh tomato, onion, pickled jalapeño and Monterey Jack cheese.

Can’t get enough of this soup. I elevated the recipe by using low sodium chicken stock instead of water.
