
Great recipe and easy to follow. Made this for lunch because I miss eating cheese! I did reduce the amount of cheese (I didn't measure the mozzarella but it was less than the recipe suggested) and I sprinkled the parmesan on the top to make it crunchy. It was enough cheese for my fix. I also omitted the onions but it tasted great. Didn't miss them! I also thought one aubergine wouldn't be enough for two, but it certainly is. I tried to eat the whole lot and only managed half.... okay a little more than half!
