A question came up about sugar. Sugar absolutely can be used. Baking soda changes the pH of the sauce, so is a better agent to truly neutralize the acidity. However, every tomato is different, so it's really to taste. Too much baking soda could "flatten" the flavors or even add some saltiness. If that happens, you'll want to add a little sugar to rebalance the flavors. Alternatively, you can substitute the baking soda for sugar if you prefer a sweeter sauce, understanding it still may be acidic enough to cause heartburn for someone sensitive to acidic foods.
