First, measure 1 cup of basmati rice (you can use any rice you prefer) and place it in the Instant Pot. Measure 2 cups of water using the same cup. The ratio of water to rice is always 2 to 1.

Salt the water and close the Instant Pot. Select the rice program and cook under pressure for 3 minutes. (In theory, it should be cooked in half the usual time, so instead of 10 minutes, it should be 5, but I found it was overcooked. So I tried 3 minutes, and it was perfect. Depending on the rice, it's always good to test it first to avoid wasting a lot.)

Once the rice is cooked, remove it from the pot and let it cool. (You'll see that the rice is cooked similarly to a rice cooker.) Meanwhile, cut the fish into cubes, in this case, salmon, but you can also use tuna, shrimp, or any fish you prefer. (The important thing is that it is safe for raw consumption.)

Cut the vegetables you prefer. Once the rice has cooled, divide it into 2 bowls. Add the fish, vegetables, sesame seeds, and chives. Season with oil, soy sauce, and lime. Or you can try it with any other sauce you have at home, like teriyaki, or if you like it spicy, some Tabasco or Sriracha.
