I tried it without the ice cubes (because I was scared of the steam burning my arm) and I had perfectly crisp baguettes! Just a tip, thanks for the recipe!! It is so delicious that I added it to my menu of breads for my bread-baking business!!

Why can't you just roll the dough into the correct shape? What does the folding do for the final outcome of the baguettes?
