How to Brew Green Tea

I actually used to be really bad at brewing tea. It was usually too strong or too bitter, but I learned how to brew tea properly at the store where I work, and it was a revelation!!
This is how they do it at the restaurant where I work. If you are from a tea growing area, or you have studied tea ceremony procedures, you may think it's blasphemous! Please forgive me. But the tea that is brewed this way has a beautiful color, and is delicious and and not bitter at all. Plus, it doesn't get too diluted even if you add ice. Recipe by Tomonchicchi

Cooking Instructions
- 1
Boil some water and prepare 2 tea pots ready.
- 2
Put 2 "tea spoons" (or 1 regular teaspoon, 5 ml) of tea leaves in one of the tea pots. (Although you should adjust the amount of tea leaves as you'd like).
- 3
Pour hot water in the tea pot without the tea leaves. The hot water should be slightly cooler than boiling, or the temperature of hot water from a hot water dispensing pot. If you don't have one of those, just boil water and leave it for a while to cool down a little.
- 4
Pour the hot water from the 2nd teapot into the 1st teapot with the tea leaves.
- 5
Leave for a while (just count up to 10).
- 6
Take the inner strainer out of the teapot with the leaves, and set it in the 2nd teapot.
- 7
Pour the tea from teapot no. 1 into teapot no. 2.
- 8
Take the inner strainer out of teapot no. 2 again, and put it back in teapot no. 1.
- 9
By removing the strainer with the tea leaves, the tea in the pot won't keep brewing (and thus darkening and becoming more bitter).
- 10
Since there are no tea leaves in the teapot with the tea, you don't need to strain it. Just pour it straight from the teapot into cups for delicious tea.
- 11
You can get another pot of tea from the same leaves ('2nd tea') and it will still taste good. You can use any type of green tea you like.

Cold-Brewed Tea Cold-Brewed Tea
Yes! The answer to your question, when there is cold-brewed coffee, there is also cold-brewed tea. Very much like cold brewing coffee, the process reduces the tannins from releasing into your tea. In other words, less bitterness and astringent flavor comparing to when brewing coffee or tea hot.I made 2 separate cold-brewed tea: a combination of green tea, lemon and blueberries, green tea and oranges. You can use red tea, earl grey, or a combination of different types of tea. As for the fruits, I would recommend citrus and berries. I am not sure about apples, pears, or stone fruits tho. But I am sure they are worth exploring and experimenting with.If you are intrigued, you can also add in some spices to your preference as well. Cinnamon, ginger, allspice, etc. The possibilities are endless. This just amps up a whole new level of tea-drinking experience! I really hope you will give this recipe a try and start cold brewing. Home-Grown Fresh Green Tea: How to Process Freshly Picked Green Tea Leaves In a Microwave Home-Grown Fresh Green Tea: How to Process Freshly Picked Green Tea Leaves In a Microwave
I don't have tea fields, I just have some tea trees planted around our house... One time, I picked some of the leaves and made them into tea for my children to use for a tea party - and what do you know, "Wow, delicious!" was the reaction. Ever since then, I make sure to make some tea when it's new harvest season. Maybe every tea tree has its own unique fragrance? The tea I make from my own trees has its own delicious fragrance that we can't get from storebought tea leaves.Around about mid-May, hairy caterpillars will start appearing in the tea trees. So if you are going to pick the leaves, it's best to do so before then. When picking the leaves, some will have insect poo on the back. Don't pick any dirty leaves!Spider webs are OK if they're just washed off! They're a sign that the leaves have no pesticides on them. Apparently, spiders don't make webs on tea leaves that have been sprayed with pesticides. For 1 batch of leaves. Recipe by Fucchi cookpad.japan -

Roasted Green Tea Pudding Roasted Green Tea Pudding
This is my own variation of a recipe that was taught to me by a neighbor. This recipe is so simple that you only need to simmer, stir, and chill the cups. You can make them even healthier by reducing the amount of sugar!Using heavy cream makes the pudding really rich and creamy.Using cream specially processed for whipping makes a lighter pudding than what you'd get when using natural heavy cream, but both are equally amazing. You can use store-bought pudding cups or jello containers to make these puddings!Make them in a pretty container to impress everyone. You can make these in the same way using regular green tea or jasmine tea.
