Aam panna is an Indian cooler prepared with raw mangoes. It is prepared during summer season to protect our body from heat. Usually it is prepared with sugar but you can replace sugar with sugar crystals, brown sugar or jaggery to make it healthier. Fresh mint leaves make this drink very refreshing and flavorful. Salt, roasted cumin powder and black salt is normally added to this drink but it can be even prepared by adding only saffron and cardamom powder.

Ingredients

  1. 1big mango (raw)
  2. 3/4 cupsugar
  3. 1/2 teaspoonsalt
  4. 1 teaspoonblack salt
  5. 1/2 teaspoonblack pepper powder
  6. 2 teaspoonroasted cumin powder
  7. 20-25mint leaves

Cooking Instructions

    First of all wash and peel the mango. Now pressure cook it with half a cup of water until three to four whistles. Now let it cool down.

    Add mango pieces, sugar, salt, black salt, roasted cumin powder and mint leaves in a mixer jar along with half a cup of water and grind it to a smooth paste. This aam panna concentrate can be stored in the refrigerator up to 5 days. Sugar crystals, brown sugar or jaggery can be added instead of sugar. The amount of sugar varies according to the sourness of the mango.

    Now add aam panna concentrate in a bowl along with chilled water and mix it. You can even add 3 - 4 tbsp straight in the glass along with some ice cubes and chilled water. Mix it and your drink is ready.

    Serve it chilled.
