Sorry, but what type of cocoa powder do i use? Brown (non-alkalised)? Darker Brown (dutch-processed)? Black? (ultra-dutched)? Thank you!

This uses the cocoa powder sold in Japan... Honestly not sure the exact type it is, but I'm assuming it's just the regular brown kind (in other words, not a specialty type)!
