@cook_740130 You might be able to skip the egg all together in this recipe. An eggs main job in cooking is to bind the ingredients together, and to provide lift. The mashed bananas should hold everything together on their own. If you find that the loaf comes out a little too flat or dense, you may try adding a bit of apple cider vinegar to the wet ingredients. When the acid reacts with the baking soda, it will produce bubbles that help things become light and fluffy.
