Those times where the way you always prepare your fav recipe that you just want a different take on it. This was one of those times. The pic above is from one of the rare times that the hubs was “helping” in the kitchen and dumps the leftovers in a bowl and kinda just mashes it to fit 🙄. It was way prettier before he “helped”.

Ingredients

  1. 2 lbsground beef or turkey or mix them together
  2. 1/2 cupchopped onion
  3. 1/4 cupchopped bell pepper
  4. 1 cupcrushed crackers, crushed (I used Keebler crackers)
  5. 2eggs, whisked
  6. 1 cupcheddar cheese, shredded
  7. 1/2 cupmilk
  8. 1 tspsalt
  9. 1/4 tspblack pepper
  10. For topping: 1/2 cup ketchup, 2 tsp brown sugar, 1tsp yellow mustard

Cooking Instructions

    Preheat oven to 350*.

  2. 2

    Sauté onions & bell pepper in 1 tbsp olive oil, until softened. About 5 minutes. Remove from heat and set aside.

    Combine eggs, onion mixture, cheese, crackers, milk, salt & pepper.

    Stir in ground beef just until blended.

  5. 5

    Form a loaf and place in loaf pan.

    Bake for 30 minutes. Remove from oven and spread topping over entire loaf. Return to oven and cook for 30-40 minutes more or until internal temperature reaches 160*.

    Remove from oven and let rest for 15 minutes before slicing. Slicing right out of the oven will cause it to fall apart.

    Serve with some mashed potatoes. Yum!

I love to bake sweet stuff, with a bit of savory tasty cooking thrown into the mix. Just good ol’ southern cuisine. Most of my recipes were handed down from my Great & Grand Grannies. If they didn’t grow it or raise it, it wasn’t eaten. My hubby and I have alot of food allergies so it gets challenging sometimes to make things that we both can eat. Neither of us can eat shellfish, which is sad, considering where we live, cuz it’s everywhere! Y’all won’t find any shellfish /saltwater fish recipes here. Some fresh water fishes, maybe. Hope y’all enjoy my recipes!
