Ingredients

  1. 2 tablespoonsoil/mustard oil
  2. 1/2 tspMustard seeds
  3. 1 tspCumin seeds
  4. 3Green chilies
  5. 1 inchGinger, grated or crushed
  6. 5-6Curry leaves
  7. 0.75 tspTurmeric powder
  8. 2 pinchHing (Asafoetida)
  9. 1 tspjaggery/Sugar
  10. 2 teaspoonsLemon juice or Lime juice
  11. Veggies
  12. 6medium Potatoes boiled, peeled, and cut into pieces
  13. 1medium red onion
  14. 0.25 cupchopped Cilantro

Cooking Instructions

    Boil the potatoes in advance.

  2. 2

    Heat the oil in a pan on medium heat. Follow tip on how to heat mustard oil.
    Once hot add mustard seeds and let them splutter. Then add cumin seeds and let them sizzle.

    Now add green chilies, ginger and curry leaves. Saute for 30-40 seconds.

    Add hing and turmeric powder.
    Immediately add onions and sprinkle a little salt to speed up the cooking process.

    Cook till onions become soft.
    Now add boiled potatoes, salt and sugar. Mix well & cook for 2-3 minutes.

    Lastly, add lime juice and cilantro. Stir and serve.
