Thank you Ricardo, your recipes are an inspiration. I wrestle with garlic, it is too hot here in summer, they dry out in between harvests. I make garlic confit and keep them in oil, frozen. Are their other methods?

Thank you Hobby for your kind message. You are an inspiration too: your recipes are among the most original. I don’t know how to keep garlic. I buy one head at a time and consume it within a month, so I don’t have the need to preserve it. But i keep many herbs and vegetables in the freezer. I chop/slice/mince them, spread them on a cookie sheet lined with parchment paper and freeze them; once frozen i keep them in bags or containers. I would think it works with garlic too. Good luck!
