Banana and raisin muffins

I walked into the kitchen and saw the bounty of bananas slowly degenerating and was determined not to let them go to waste. Now I'm not a fan of baking but I thought why not try my hand at a simple banana bread recipe. It came out successfully and i really enjoyed it. It wasn't too sweet and the banana was not overpowering as it can be sometimes. It had a nice texture although nuts would've been a great addition. I also added a honey ginger glaze left a nice taste in my mouth too. I'll definitely be trying this again.

Ingredients

30 minutes
6-12 muffins
  1. 3bananas
  2. 2 tablespoonraisins
  3. 2 cupsflour
  4. 3 tablespoonbaking powder
  5. 1/4 teaspoonsalt
  6. 3/4 cupsugar
  7. 1/2 cupcoconut oil
  8. 2eggs

Cooking Instructions

30 minutes
  1. 1

    Preheat oven to 350F/180C. Grease muffin tins.

    Combine sifted flour, baking powder and salt in a container.

  3. 3

    Combine eggs, sugar, coconut oil, mashed bananas and raisins in a separate container.

  4. 4

    Combine flour mixture and banana mixture.

  5. 5

    Fill muffin tin sections with the batter to the brim.

  6. 6

    Bake for 20 minutes. If desired, coat muffins with a glaze 15 minutes into baking time.

    Allow to cool before trying to remove from tin.
