Ingredients

Serves 3-4 servings
  1. 1/2 cupquinoa
  2. 1/2red onion
  3. 1/4red bell pepper
  4. 1/2cucumber
  5. 4 tablespoonscorn
  6. 1 cantuna
  7. 2 tablespoonsolive oil
  8. Juice of 1/2 small lemon
  9. Salt, to taste
  10. Black pepper, to taste

Cooking Instructions

    Rinse the quinoa and cook it in a rice cooker with an equal amount of water.

    Chop the red onion, red bell pepper, and cucumber into small, bite-sized pieces that will mix well with the quinoa.

    In a bowl, combine the cooked quinoa, chopped vegetables, corn, and drained tuna. Add the olive oil, lemon juice, and mix well.
