Homemade Banana Bread French Toast

I made this breakfast a few years back when I didn’t have white bread in the house but Banana bread from the day before.

So I thought why not use the banana bread for french toast and that’s how banana bread french toast become famous in my home for the weekends.

Who can resist maple syrup, and melting butter lingering over the layers of thick banana bread waiting to be consumed on a weekend? My family :)

Ingredients

4 servings
  • 3mashed ripe bananas
  • 1/3 cupbuttermilk add a tsp of lime juice and set aside for a few minutes
  • 2eggs room temperature
  • 1/2 cupoil
  • 1 Tablespoonvanilla
  • 1/3 cupsugar or less (The bananas give the bread a natural sweetness and syrup is also added in the dish)
  • 1 3/4 cupsflour
  • 1 teaspoonbaking soda
  • Pinchcinnamon
  • French Toast
  • 3eggs
  • 2 Tablespoonsmilk or cream
  • Pinchcinnamon

Steps

  1. 1

    Mix dry ingredients in a bowl.

  2. 2

    Mix wet ingredients in a separate bowl.

  3. 3

    Combine wet and dry ingredients (Do not overmix)

  4. 4

    Pour into the oiled loaf pan. Bake at 350F/180C for 45 minutes or until your toothpick comes out clean.

  5. 5

    Mix eggs, cinnamon, and milk in a bowl and dip the banana bread slices coating both sides.

  6. 6

    On a buttered pan on medium heat toast the slices until evenly browned. Since they are cut thick, make sure you toast on all sides.

  7. 7

    Serve with syrup, powdered sugar, whipped cream and fruits.

  8. 8

    Recipe Notes: I normally prepare the banana bread the day before. Makes life easier on the weekends.
