Mix spices together and spread over both side of raw chicken.
Then…
Heat a pan with oil and butter. Then add chicken to pan and cook through. - 2
When chicken is cooked, set aside on plate and use the same dish. (Don’t clean or wipe) add shallots/onions to pan and caramelize.
Then add chicken stock, and cream cheese, mix thoroughly. When smooth, add Dijon mustard, mix.

When completely mixed, add chicken back and let simmer for a minute or two. Serve hot with fresh diced chives over the top.
