Ingredients

  1. 1-1.5 lbsboneless skinless chicken tenders or breasts
  2. Chicken seasoning:
  3. 1/2 tspsmoked paprika, garlic powder, onion powder, salt, pepper, oregano, thyme
  4. 1 tbspbutter
  5. 1 tbspolive oil
  6. Sauce:
  7. 2shallots or half a yellow onion chopped finely
  8. 1 cupchicken stock
  9. Halfblock of cream cheese (approx 5 oz)
  10. 1 tspDijon mustard
  11. Diced chives (optional; to taste)

Cooking Instructions

    Mix spices together and spread over both side of raw chicken.
    Then…
    Heat a pan with oil and butter. Then add chicken to pan and cook through.

    When chicken is cooked, set aside on plate and use the same dish. (Don’t clean or wipe) add shallots/onions to pan and caramelize.

    Then add chicken stock, and cream cheese, mix thoroughly. When smooth, add Dijon mustard, mix.

    When completely mixed, add chicken back and let simmer for a minute or two. Serve hot with fresh diced chives over the top.
