Thanks for this! We moved to a new place last year that has a hawthorn. I hate to see anything go to waste, and syrup sounds like a perfect way to make use of the berries.

Can I ask if the water you cover with to cook is taken out of the 2 litres? Also how long does it keep in the fridge for? Thank you 😊

Hi @Ziggyrosa24 I’m just trying this for the first time now and had the same question. The water to cook must be discarded, I think, as it will contain impurities from the cooking. The 2 litres of water is mixed with the liquor from the mashed haws.

@PatrickC No don't discard the cooking liquid, that is what you use to make the syrup. You add the other ingredients to it. You must discard the seeds and flesh as they contain the impurities/toxins etc.

You must discard the seeds and flesh as they contain the impurities/toxins etc. When you strain it, measure it into a jug and make it up to 2 litres or just add a full 2 litres with water.
