Oh my gracious sakes, the best collards I've ever made, even my husband who doesn't care for collards enjoyed them. This is a keeper! The only thing I did differently was adding 2 thick slices of applewood smoked bacon. Just heaven....

I use country ham skins or jowl bacon,the ham hock skin is tough takes longer to cook.

Try using smoked Turkey tails instead! best flavor by far in my opinion :chef

love greens will try this i allways cook mine with smoked turkey or hamhocks but this sounds good and its different.

I grow my own Collards and can them. I use a recipe very similar. I add a little garlic and some cayenne pepper for some heat. try adding kale or mustard greens as well, start the Collards first as they are a little firmer :ohyeaah
