I use blackstrap molasses. It gives the gingerbread richer flavor. Also, for a treat, I will chop up 2 tablespoons candied ginger and use real butter.

Ingredients

8 servings
  1. 1 1/3 cupflour
  2. 1/2 cupfirmly packed light brown sugar
  3. 1/2 tspbaking powder
  4. 1/2 tspbaking soda
  5. 1/4 tspsalt
  6. 3/4 tspcinnamon
  7. 1/2 tspginger
  8. 1/2 cupshortening, margarine or butter
  9. 1/2 cupboiling water
  10. 1/2 cupmolasses
  11. 1egg, slightly beaten

Cooking Instructions

    Preheat oven to 350°F.

    Grease bottom only of 9" round pan or spray muffin tin with pan spray

  3. 3

    In large bowl combine flour, brown sugar, baking powder, baking soda, salt, cinnamon, and ginger; mix well.

    Add remaining ingredients; blend well. Pour into greased pan, or fill muffin tins 2/3 full.

    Bake at 350°F for 25-35 minutes or until toothpick inserted in center comes out clean.
