I really wish I had extra large muffin tins! They turned out great but I put to much egg in & it over flowed in my oven! I will definitely try these again with bigger tins! Great for my son's breakfast before school!

Very, very good! I did something a little different by adding left over sausage gravy, which left no room for egg. I did everything else the same as the original recipe. I plan on trying the original recipe next time.

I used diced ham, chopped scallions and sharp cheddar, along with salt, pepper, garlic powder and cumin. I cooked them for almost twice as long as the recipe said because the eggs weren't set. They were really tasty. I will make these again and play around with the cooking time and temperature.
