There should be temperatures in this recipe. You have to boil it for awhile to make enough curds. Don't just turn off the heat right when it boils like the recipe says. If you only get a tennis ball sized amount of soft cheese, you can repeat the entire process (with the same drained-off whey), let it boil longer, and get at least twice as much cheese.
