This recipe is known as Imam Bayildi (Turkey) and and Melitzanes Imam (Greece). The removal of half the peel is known as pyjama-ing!You can add a half tsp cinnamon, a little sugar and juice of half a lemon. It's also better to add the parsley towards the end of the sauce's cooking time. :positive
