I made some personal improvements (because I think my coriander leaves needed to be cooked; I'm uncomfortable about not cooking them):Garlic, chillies and onion frying in a little bit of oil until onions are brown. Proceed with the rest of the ingredients, and add spring onions and / or lemon grass in the mix too.The cooking doesn't need much time (although I love coriander's fluids to overwhelm everything in the pan). Turn off the gas. Add yogurt (preferably homemade).Call me crazy, but I LOVED this with freshly boiled pasta! :-)
