Nice alternative to French fries. Yellow potatoes break apart into individual fries easily after cooking. I recommend putting the top rack as close as you can to the top of the oven so the potatoes cook through and crisp up.

Works great on sweet potatoes too!And fun tip for leftovers - pop them in the broiler for a few minutes until they get crispy on top!Give these to any non-sweet potato believers.
