I am so happy to finally see a version of this recipe! When I was in high school, I took an advanced Spanish Immersion program and it included a cooking class. Mr Lopez made Gazpacho Pobre and I loved it. This is close to his. (I believe his also had pepper in it and did not have bread (it was made to drink instead of being put in a bowl. I can still taste the slight 'salad dressing-taste'
