Question about step #6: When I return the mix of egg and a part of the tapioca to the pan, is the fire still on? Shall I wait, in that case, to having the egg properly cooked? Which is the purpose of the egg? Thanks!!

The egg adds cohesiveness and viscosity. You should be incorporating the ingredients into the saucepan, which should still be cooking. So, yes, still on the fire.
