Curry Pork Roast

Cooking Instructions

Marinate pork in coconut milk for 4-48 hours. Rinse. Pat dry.

Combine all spices except dried minced onions and salt into a bowl. Heat up a non-stick saute pan with the heat cranked up. Put all spices into the ripping hot pan and toss constantly until spices are fragrant. Do not burn. Transfer back to bowl.

Cover roast with enough oil to coat. Season. Bake at 300° for approximately 1 hour or until pork reaches desired doneness.

Variations; Red or yellow curry powder or paste, ghee, fenugreek, paprika, vegetable or peanut oil, brown sugar, cayenne, crushed pepper flakes, cilantro, chili powder, lemon, tomato, pumpkin pie spice, sumac, allspice, nutmeg, espresso

In fact, it's barely detectable as anything other than a pleasant, mildly-spiced warmth on the crust of the roast. Neither my wife nor my daughter are curry fanatics, and they loved it. As for the chimichurri, well...honestly, it's not entirely necessary to complete the dish. But I just love a nice, bright chimichurri with my pork roast. And this chimichurri is very bright. Another recipe I create on my own. I love to try varieties and somehow it turn out well. Hubby said his tummy is happy and that why he reluctantly have meal outside. He is a family man and he prefer to have food at home. And I am more than happy to cook all the meal because it is my hobby too 😃 no artificial flavor only salt and brown sugar. Betsy -
