Ingredients

6 servings
  1. Beets
  2. 2 eachMedium to Large Red Beets (about 1 pound)
  3. 1Splash of Red Wine Vinegar
  4. Dressing
  5. 1 tspDijon Mustard
  6. 4 tbspFruit Vinegar (raspberry)
  7. 1 tspWasabi Paste
  8. 1/4 cupWalnut Oil
  9. 1Salt and Pepper, to taste
  10. Salad
  11. 2 tbspChopped Basil
  12. 12-inch Piece Black Licorice
  13. 1 eachOrange, divided into segments and cut into bite-size pieces
  14. 1 eachMedium Avocado, medium dice

Steps

  1. 1

    Boil a pot of water.

  2. 2

    Add a splash of red wine vinegar and the beets.

  3. 3

    Boil covered for 20 to 30 minutes, or until you can stick them with a fork and it comes out clean.

  4. 4

    Meanwhile, put the licorice in the freezer to let it get rock hard.

  5. 5

    When the beets are cooked, peel and chop them (while still warm) into bite-size pieces.

  6. 6

    Whisk together the dressing ingredients.

  7. 7

    Toss beets in the dressing mixture.

  8. 8

    Fold in the orange, avocado, and basil.

  9. 9

    Remove the licorice from the freezer and shave atop the salad as you would Parmesan cheese.
