ANZAC day is a day of commemoration in NZ and Australia. The traditional cookie is the biscuits made in this recipe, only without the ganache centre.

They're a delicious biscuit eaten without the ganache if you prefer a simpler recipe.

It's a very easy recipe that I've never had fail on me. Instead of using ganache, you can add ice cream which is really nice. You can head over to www.creamish.com.au to get some ideas for homemade ice cream. Or, just use the store bought ice cream!

Ingredients

10-15 minutes
8 biscuits
  1. 1 1/4 cupsrolled oats
  2. 1 cupdessicated coconut
  3. 1 cupplain flour
  4. 1/2 cupbrown sugar
  5. 1/4 cupcaster sugar
  6. Pinchsalt
  7. 1/2 cupbutter
  8. 3 Tbspgolden syrup
  9. 1 tspbaking powder
  10. 2 Tbspboiling water
  11. 1 cupchocolate
  12. 3/4 cupcream

Cooking Instructions

    Preheat oven to 160 degrees C or 315 F. Line 2 baking trays.

    Mix oats, coconut, flour, sugars and salt in a bowl.

    Place butter and golden syrup in a saucepan and heat until melted, on low heat.

    In a separate bowl, mix baking soda and water then add to butter. Stir to combine.

    Pour wet ingredients into flour and mix until combined.

    Shape into small balls and place on baking tray.

    Press down lightly with a fork or the bottom of a glass.

    Bake for 10-15 minutes until golden brown.

    Remive from oven and allow to cool for a few minutes before placing on a wire rack.

    For the ganach centre, melt the chocolate and cream in a small saucepan. Allow to cool then spread between two buscuits.
