Hi Felice. Do you know how to do it without lye, cooking method? It seems to be difficult to get food grade lye where I am. 😤

I haven't tried it with the sourdough pretzels yet but you can boil with baking soda for a similar taste: boil 1 liter of water with 2 TBSP baking soda. Dunk the pretzels in for 30-60 seconds right before baking.

Lye Alternative: To make a lye alternative, dissolve 1/2 cup baking soda in 2 quarts of boiling water. Boil the pretzels for 30 seconds, then drain on wire racks before salting and baking.

5 years later, but just in case anybody else comes across this-- I find that baking soda doesn't work so well. However, if lye is a problem, you can actually use "baked" baking soda with similarly good results. You just bake the baking soda at 250-300 for 1 an hour or so. It needs to be sealed in an airtight container, though, or else it loses its magic.

Have made these 4x and they are wonderful. May experiment with soaking a bit longer in the lye bath for an even deeper brown!
