Another corn dish 😊.
You know name of the dish is Hong Kong crispy corn 🌽 (and I can't say this without moving my head from left to right😆) Believe me or try it yourself!
This corn dish was taught to me during my food science diploma course. He was a strict teacher and would not accept any compromise with the recipe. Every ingredient needed for the recipe has to be there if he's taking the practical.
Also we must follow the procedure as instructed.
I had started cook when I was in school. My mom was not somebody who enjoyed cooking and in rotation we would be fed with same thing served in same way again and again.
I was bored with this and started going in the kitchen. I would decorate the plate and serve everyone in starting but gradually I had started giving tadka in the daal, frying potato and then making chapattis.
I started to enjoy this and everyone around me in the family appreciated whenever I made something.

Cooking Instructions

Boil water and in the boiling water put corn, cook for 5-6 mins or till it turns yellow. put corn in a perforated vessel and keep aside.

For Sauce
Heat oil in a wok and add finely chopped ginger, garlic and green chilli and sauté for a while; then add chopped onions cook till translucent. Add red chilli paste and cook another 2 mins and keep stirring throughout the process. Once this is done add Red chilli paste soya sauce, vinegar, red chilli sauce, tomato sauce and stir well. Now add chopped bell peppers, celery, basil leaves and chopped spring onion mix everything well and switch off the flame keep it to cool. - 3
In a bowl put boiled corn, salt to taste, black pepper and corn flour and toss this mixture (keep adding corn flour till each corn is coated well and if needed add few drops of water).

Heat oil in the wok, put coated corn in the oil and fry (on medium flame also corn might crackle so you can cover the wok with transparent lid) once it becomes crispy, take out from oil and put the fried corn on the tissue paper so it absorbs extra oil. Mix sauce with the fried corn, garnish as you desire and serve immediately.
