This is a great recipe, my niece has been asking me to make this lately, the pineapples themselves aren't really necessary but they are fun to serve in.

I really enjoyed this and it was fun serving them in a pineapple shells however I probably won't serve them in a pineapple shells again unless it's just me and my husband. Kids were gone this weekend and I think they would enjoy it as well. I do think I'll use a can of pineapple tidbits instead of the listed crushed pineapple next time even though the fresh pineapple was deliciously sweet. I did add a little diced white onion and diced red and green bell peppers that I cooked with the chicken and I topped each pineapple bowl with sesame seeds.

I also enjoyed it with some oven roasted lightly seasoned broccoli and some hawaiian sweet rolls and used brown rice because I didn't have white rice on hand but next time I'll be sure to use white rice as I'm sure it would taste better.

I usually use brown rice too, it's what we keep on hand. I'm glad you enjoyed it.
