They're surprisingly delicious. The pineapple flavor is concentrated, and the toughness of the core is unnoticeable with the thin slicing and the roasting.

Very much so. Essentially, this is just a recipe for dehydrated pineapple. By slicing the pineapple in this specific way and leaving the slices to set up in a muffin tin, you get the cool flower garnish effect. But yes, dehydrated pineapple is delicious. The texture changes, and the flavor intensifies.

I've seen them used as garnishes for coconut flavored cupcakes, but I would think as a garnish for a tropical drink would be cool.
