Mix the butter with the brown sugar. You can do this manually with a whisk or with an electric mixer. It should be well mixed, so it's important to have the butter at room temperature.

Add the egg and continue beating until combined.

Incorporate the honey as well.

Add the dry ingredients (flour, cinnamon, and ginger) sifted, and mix slowly. If using an electric mixer, be careful and use the lowest speed to prevent the flour from flying out. It's recommended to mix it a bit manually before using the mixer.

Finish kneading with your hands until you have a dough that doesn't stick to your hands. Roll it out on plastic wrap and refrigerate for about 30 minutes.

After this time, take out the dough and flatten it with a rolling pin. Try to make the dough an even thickness for uniform baking. 1/5 inch is perfect for our cookies.

Cut with cookie cutters and place the cookies on a baking sheet lined with parchment paper.

Bake at 350°F (180°C). The baking time depends on the thickness of your cookies, so keep a close eye on them, and when the edges start to brown, they are ready. I placed mine in the upper third of the oven to prevent them from burning on the bottom, but this will depend on your oven's power.

Let them cool on the oven rack, and once they are cool, decorate with colored icing. I bought mine ready-made and colored, but you can make it homemade if you prefer. And that's it! Enjoy them.
