Aw man, these are great. I always look forward to sunchokes. Used to garnish one of my pizzas with sunchokes chips. Sounds odd, but it was great.

Oh I bet sunchokes would be awesome on pizza! I like to made pizza with root veggies because they get nice and crisp, but didn't think of sunchokes! I'll try that next time

Yeah, we used the puree as a sauce sometimes too, and that was really great.
